Barbecue has a wide appeal with over 95 percent of Americans saying that they like barbecue, and nearly one-third saying that they eat barbecue
or barbecue-sauced foods in any given week. The popularity of BBQ has translated into $2.9 billion worth of sales for this niche segment
of the U.S. restaurant industry, with BBQ restaurant sales growing by a rate nearly double that of the overall industry in 2014.

          As regards barbeque, I must define myself as a consumer . . . only. I live a contented hermit lifestyle in the middle of New Mexico USA and do not own a grill or meat cooker in addition to the stovetop and microwave in my kitchen. These pages were put together because I had accumulated a ton of barbeque brand logos and restaurant info and cookbook covers to use on my Spirit of America Online Bookstore website, and I decided it was time to make use of them. In a week, I had built the four pages seen here: Page One is general retail barbeque product information; Page Two is barbeque- & grilling-related product, including cookbooks and equipment and weblinks; and Pages 3 & 4 are links for the many brands of individual and chain barbeque restaurants across America. More tidbits will be added as time and whim dictate.
          In my travels pre-COVID-19, I decided that my favorite style of barbeque is the Kansas City flavor, and my favorite meat up there in Albuquerque is the pulled pork at Rudy's, without further sauce. I will often try other vendors and flavors as simple relief to boredom. I am in no way a culinary critic, but I have been eating food for many years now and will of course include concise opinions/reports here and there.
          I will be most pleased if each visitor here finds some previously-unknown or long-wanted factoid or product to visit or examine and-or purchase.

Santa Maria-Style Barbecue
The Santa Maria Valley is positioned by the pacific coastline and is 150 miles northwest of downtown Los Angeles and about 65 miles northwest of Santa Barbara. In early Californio days, before the California Gold Rush, the favored cut of beef for barbecue at fiestas was top-block sirloin; then, as today, the meat was rolled in a mixture of salt, pepper, and garlic before being barbecued over red oak coals, which contribute a smoky, hearty flavor. In the 1950s, a local butcher named Bob Schutz perfected the tri-tip, a triangular bottom sirloin cut that quickly joined top-block sirloin as a staple of Santa Maria-style barbecue. The traditional Santa Maria-style barbecue menu was copyrighted by the Santa Maria Valley Chamber of Commerce in 1978.

Sous Vide  Cooking
Sous vide – French for 'under vacuum', pron. 'soos veed' – is a method of cooking moistly that was developed in France; sous vide involves sealed containers,
